Sparkling by nature

From the steep hillsides of the 10 communes in the AOC zone, covering almost 130 ha of vineyards, Cerdon is a sparkling wine with a pretty pink color, produced mainly in Cerdon and the surrounding area.

It is the result of a subtle marriage between the Poulsard and Gamay grape varieties. It is vinified using a unique ancestral method, with no added sugar or yeast.

Wine for pleasure

This sparkling wine, with its elegant, flattering pink color and fine, light mousse, has earned its letters of nobility. It is the undisputed partner of barbecues, shady lunches and festive evenings with family and friends.

How to recognize a Cerdon? A pleasing color, a fine, light mousse, aromas of cherry, blackcurrant, raspberry and redcurrant enhanced by a well-balanced semi-dry character, between sugar and acidity.

Enjoy it chilled, ideally served in a flute as an aperitif, with dessert or, why not, as an afternoon snack with a galette de Pérouges!

Of course, despite its limited alcohol content of 8°, Cerdon should be enjoyed in moderation.

Traditional bubbles

The ancestral method is essentially characterized by two vinification stages.

The first fermentation takes place in vats at a temperature of 4°C to 9°C, until the wine has about 6% alcohol by volume. It is then coarsely filtered to stop fermentation, bottled, capped and stored lying down in the cellar for two months.

During this time, fermentation resumes naturally in the bottle, without the addition of sugar or yeast. This is called prise de mousse. Once the gas in the bottle is saturated, fermentation stops: the result is a Cerdon with 8% alcohol by volume and a pressure of 4 to 5 bars. The bottles are then emptied and washed.

The wine is filtered and finally bottled with a cork and wirehood. Now it’s ready to enjoy!
