For four generations... In 1927, Lionel's great-grandmother Marie Bouvier founded the restaurant and its reputation. From 1946 to 2001, her daughter-in-law, Yolande Bouvier, known as Mère Bouvier, consolidated the restaurant's reputation with local specialties such as frogs and creamed chicken, much appreciated by Bressans and Lyonnais alike. She was helped by her daughter, Marcelle, mother of Lionel Paccoud. He trained with star chefs and in renowned restaurants: Georges Blanc in Vonnas (01), la Bastide de Saint-Tropez (83), la Bastide St Antoine in Grasse (06), l'Oasis in Mandelieu (06). In 2001, he took over the family and gastronomic heritage, adding his personal touch to regional dishes.
Specialties: Bresse chicken with cream sauce, Ain free-range chicken, parmentier pancakes, sautéed parsley frogs' legs as in Dombes, red mullet crosti with olive, mixed salad and eggplant caviar.
